Confit chicken thighs with southern vegetables

Ingredients :
- 8 Confit Chicken Thighs
- 2 red peppers
- 2 yellow peppers
- 2 courgettes
- 1 tin tomato concentrate
- A few onions
- Salt
- Pepper
- Olive oil
Preparation :
- Finely slice the peppers and courgette and peel the onions.
- Heat the olive oil in a pan. Brown the vegetables and add a teaspoon of tomato concentrate
- Cook for 20 minutes, making sure that the vegetables remain firm.
- Gradually add small quantities of water if necessary.
- Season with a pinch of salt and pepper.
- In another pan, place a teaspoon of olive oil and brown the confit chicken thighs for 2 to 3 minutes on each side.
- Arrange on the plates - and enjoy!
