Confit chicken thighs with southern vegetables

Ingredients :

  • 8 Confit Chicken Thighs
  • 2 red peppers
  • 2 yellow peppers
  • 2 courgettes
  • 1 tin tomato concentrate
  • A few onions
  • Salt
  • Pepper
  • Olive oil

Preparation :

  • Finely slice the peppers and courgette and peel the onions.
  • Heat the olive oil in a pan. Brown the vegetables and add a teaspoon of tomato concentrate
  • Cook for 20 minutes, making sure that the vegetables remain firm.
  • Gradually add small quantities of water if necessary.
  • Season with a pinch of salt and pepper.
  • In another pan, place a teaspoon of olive oil and brown the confit chicken thighs for 2 to 3 minutes on each side.
  • Arrange on the plates - and enjoy!
