Slices of chicken and smoked duck,
avocado cream with pine kernels and goat's cheese

- Ingredients : - 4 skinned chicken breasts Jean Routhiau
- 1 cooked and smoked duck breast sliced, Jean Routhiau
- 100g goat’s cheese “as you like it”
- 4 thick slices of farmhouse bread
- Extra Virgin olive oil
- 2 ripe avocadoes
- Squeezed lemon juice
- 100 cl liquid crème fraîche
- 40 gr roasted pine kernels
- Tabasco
- 20 gr chives
First step :Preparation
- Put the flesh of the avocadoes in a blender with a bit of lemon juice and a drizzle of Tabasco.
- Blend to a creamy preparation.
- Add the chives and 30gr roasted pine kernels. Blend very lightly.
- Whip the liquid cream and blend it delicately with the avocado.
- Season and store in fridge during an hour minimum.
Second step :When you serve
- On each toasted bread slice, spread a bit of olive oil and top with a layer of avocado cream.
- Slice the chicken and smoked duck breasts; place a slice of chicken breast and one of smoked duck breast over each slice of bread .
- Crumble the goat’s cheese roughly and spread it over each slice of bread.
- Add a drizzle of olive oil, the rest of pine kernels, a bit of unrefined salt and milled pepper.
